Dalgona coffee is a home-made version of beaten coffee popularized on social media during the 2019–20 coronavirus pandemic.
Dalgona coffee is a beverage made by whipping equal proportions of instant coffee, sugar and hot water until it becomes creamy and then adding it to cold or hot milk.
Occasionally, it is topped with coffee powder, cocoa, crumbled biscuits, or honey.
It is not possible to make dalgona coffee using ground coffee beans; instant coffee creates the dense and foamy topping and the reason for this has much to do with the drying process of the coffee granules.
If you've got instant coffee, sugar, and water on hand, you can make this. It'll go by faster if you have a hand mixer, but a humble regular whisk, one powerful arm, and a good dose of patience and endurance will get you there too—just make sure you're ready to feel the burn in your triceps and biceps and you'll be rewarded with a nice tall glass of cold, creamy coffee that's sweetened just right.
Watching the raw ingredients morph into a chocolatey paste and then ripple into golden waves in a matter of minutes is quite satisfying and made me feel like a mad scientist.
